TOMATO & MOZZARELLA SALAD
My best most favorite breakfast is sliced tomato with fresh basil on toasted Italian bread. For this, I will follow you anywhere!
6 lg. tomatoes, sliced
8 oz. Mozzarella cheese
1 purple onion, sliced (opt.)
12 whole fresh basil leaves
DRESSING:
3 tbsp. olive oil
3 tbsp. red wine vinegar
1 garlic clove, minced
3 fresh basil leaves, coarsely chopped
1/4 tsp. oregano
Pepper
On a bed of lettuce, arrange tomatoes, cheese, onion, if using, and basil. Mix all dressing ingredients together and pour on top. Garnish with sprigs of parsley, if desired. Serves 8.
I sometimes simply serve a tomato slice topped with a slice of Mozzarella, topped with fresh basil leaves and sprinkled with a little olive oil. Great at buffets and I never have leftovers.
